The poblano is an extremely popular Mexican chili pepper. The pods typically grow 4 inches long, are a very dark green in color, ripening to dark red or brown. They are mostly picked when green for general cooking. They are mild peppers, quite large, and are somewhat heart-shaped. 3-4 peppers
Poblano Peppers walls and skin are fairly thick, making them ideal for stuffing. We like them stuffed with Mexican spiced brown rice, Organic Black Beans, and roasted Corn, topped with gooey Oaxaca Cheese. The mild spice and creamy cheese, the protein from the beans, and brown rice and depth from the roasted corn make a perfectly balanced summer meal!
