Eggplant Fact: Botanically, eggplant is a berry, just like blueberries, watermelon, or tomatoes.
Keep it simple and try Roasted Eggplant! Just slice, pierce with a fork, toss in Market Olive Oil and salt and pepper, and spread onto a baking sheet. Roast at 400F for about 20 minutes. The garnishes are endless but we like to drizzle Eggplant in Market Tahini, Pomegranate Seeds and Parsley.
