Parmigiano-Reggiano is a hard, dry cheese made from skimmed cow's milk imported from Italy. It has a hard pale-golden rind and a straw-colored interior with a rich, sharp flavor. Parmigiano-Reggianos are aged at least two years and their complex flavor and extremely granular texture are a result of that long aging process. Parmigiano-Reggiano has been called the "King of Cheeses" and Italians don't just slap this phrase on any old cheese. There are criteria that have to be followed, so you know this is the good stuff!
This is a must in every food lover's household as far as we are concerned! Grate it over just about anything to instantly make it better. Or, as we would recommend, add it to a cheese board and pair with San Daniele Prosciutto--that salty, crumbly parmesan and buttery prosciutto will melt on your tongue and do a sensual dance of flavors.
